Η Γαργαρέττα είναι μία από τις παλαιότερες συνοικίες της Αθήνας, το όνομα της οποίας τείνει να χαθεί στο πέρασμα του χρόνου. Τo όνομά της αποδίδεται σε μία ιταλική οικογένεια, η οποία καλλιεργούσε κτήματα, σ’ αυτή ακριβώς την περιοχή, κατά την περίοδο του Μεσαίωνα.
Η έμπνευση για τη δημιουργία της Gargaretta προέρχεται από τον ιστό της πόλης που υφαίνεται αενάως, με το παρελθόν και το παρόν, με επαναλήψεις και αντιθέσεις και αποτυπώνεται σε στοιχεία της σύνθεσης του εσωτερικού χώρου.
Η ιδιαιτερότητες που η πρόταση έπρεπε να επιλύσει ήταν ο διαχωρισμός σε δύο επίπεδα, το μεγάλο μήκος και το περιορισμένο πλάτος. Το ζητούμενο ήταν ο χώρος αγκαλιάζει τον επισκέπτη και να ξυπνάει στη φαντασία του, αρώματα και τις γεύσεις της Μεσογειακής γης.
Οι λειτουργίες του χώρου, εστιατόριο και παντοπωλείο, οργανώνονται γύρω από ένα επίμηκες κεντρικό άξονα, διαχωρίζονται σε δύο επίπεδα, με τον μάγειρα να ολοκληρώνει τις συνθέσεις της κουζίνας στη μία ζώνη και τον μπαρίστα και τον οινοχόο να δημιουργούν στην άλλη ζώνη.
“Η κουζίνα και οι βοηθητικές χρήσεις χωροθετούνται στο υπόγειο”.
Η μοναδική εσωτερική όψη κατά μήκος του εστιατορίου μετατρέπεται σε μία σκαλωσιά και δημιουργεί έναν κάναβο με επιφάνειες, εύκαμπτα κελύφη – προθήκες και κλειστά ερμάρια, που φιλοξενούν τοπικά προϊόντα από διάφορες γωνιές της Ελλάδας.
Την ημέρα ο χώρος κατακλύζεται από φυσικό φως χάρη στα μεγάλα υαλοστάσια, που μπορούν να ανοίγουν, συνδέοντας τον επισκέπτη με τον ρυθμό της πόλης. Το βράδυ δημιουργείται μία ζεστή ατμόσφαιρα με διακριτικό και ισορροπημένο φωτισμό.
“Η αισθητική του χώρου επεκτείνεται και στην αθέατη, αλλά τόσο σημαντική διάσταση της ακουστικής του”.
Σχεδιάστηκε ειδικά μία οροφή που αποτελείται από 2000 μ. μέτρα μήκους λωρίδες ηχοαπορροφορητικού υλικού. Η επιφάνεια έχει πλεχτεί στο χέρι καλύπτοντας όλη την οροφή και δημιουργεί έναν χώρο φιλόξενο και ήρεμο που σε καλεί στην συνομιλία και στην επικοινωνία.

Gargaretta is the name of one of the oldest neighborhoods of Athens, which tends to be forgotten with the passage of time. The name is attributed to an Italian family that owned and cultivated the land, in this very area, during the Μiddle Αges.
The inspiration for the creation of Gargaretta derives from the center of the city that is constantly changing and developing, blending the future and the past, the repetitive patterns and contrasts. This is reflected in all the elements of the interior design.
The challenges and the obstacles that had to be resolved were the division into two levels as well as the substantial length and the limited width of the space.
“The intention was that the space should embrace the guest and trigger her imagination, bringing out the aromas and colors of Mediterranean culture”.
The functions of the space, both a restaurant and a market, are organized around a central axis, dividing it into two levels; the cook gives the final touch to the dishes in the first zone while the bar tender’s and the sommelier’s area shapes the second one.
“The kitchen and the auxiliary areas are situated in the basement”.
The only interior wall, running the length of the restaurant becomes a kind of scaffolding and creates a grid with surfaces; malleable shells that function as vitrines and closed shelves in which locally produced goods from different places in Greece are housed.
“The materials used are textiles and leather, metal and wood”.
Special attention is given to the details and the texture of the materials, since each one has a story to tell. During the day the whole space is filled with light thanks to the large glass panels that can be opened, linking the guest with the vibe of the city. In the evening the atmosphere is cozy with a balanced, discreet and delicate lighting.
“The interior design encompasses the invisible, but very important, dimension of sound”.
The ceiling is covered with over 2000 meters of soundproof strips. This surface is knitted by hand and covers the whole ceiling creating a welcoming and calm environment which stimulates conversation and communication.
